Sure. Get notepad++ though, a lot easier to work with. Open up the cards.xml file.

The first tags are of set <sets>
</sets>, place your custom set name in between these on a new line.

The templating for a set title goes
(<sets>)
        <set>
            <name>NAME</name>
            <longname>LONGNAME</longname>
        </set>
(</sets>)

Name is the acronym and longname is the whole name of the set

For cards,
The tags begin with <cards>
</cards>.
Place your card in between those, like so.
 (<cards>)
        <card>
            <name>NAME</name>
            <set picURL="URL OF IMAGE" picURLHq="" picURLSt="">SETNAME</set>
            <color>WURBG</color>
            (<color>WURBG</color>)
            <manacost>12345WURBG</manacost>
            <type>TYPE - SUBTYPE</type>
            <pt>P/T</pt>
            <tablerow>1</tablerow>
            <text>TEXT w/ flavor text</text>
        </card>
  (</cards>)

The name of the card is obvious.
You can upload a picture to any image server and just copy the image url. The SETNAME is the acronym for the set it is in.
Color is usually the letter correspondent. If more than one color, copy the tag and make a new line with the different letter correspondent. As of now, it is in parentheses which means that you erase the line if it is a single color.
Mana cost is the cost of it. (1W), etc.
Type is Sorcery, Instant, Artifact, etc. Subtype is Humans, Plains, which is not needed if there is no subtype.
P/T is only for creatures, self explaining. Get rid of the line if there are no P/T. 
Tablerow is only 1-4, it doesn't really matter too much.
The text what the card does, so cockatrice can open it up in the box underneath the card information. 


The tags in parentheses are unneeded when actually putting cards into cockatrice as they will already be there. Just place your cards and sets underneath them in a new line.

Well, I never thought of opening the set file lol

Using this though, I was able to change set images for the basic lands to the full art.

You can change what you default art is in the sets tab in Cockatrice itself.

On the topic of land art though, I've found I prefer M11 > Unhinged > Zendikar > Odyssey > Everything else.

That's... interesting. Not sure how good it really is. I mean, Doom Blade outshines it if that's the real effect.

It's cool at least  A 4 mana removal spell though doesn't sound very playable.

Essentially it's a Doom Blade followed by a 1B: Add BBB to your mana pool, which, separately, are playable. Though yeah, it's not worth it.
