Because I like my lands coming in untapped and having a decent sweeper in Mutilate. I lose some very good sideboard cards and Olivia Voldaren by removing red, but the deck gains a lot as well, especially a more forgiving mana base. I also like the idea of taking the deck away from AEtherling as the win condition. I absolutely love the card, but I'm too much of a conservative player to actually love trying to win with it.
