If you eat one, you get awesome powers, depending on what kind, but you can't swim and you'll just sink like a rock since the sea has rejected for eating one. They are three types, Paramencia which gives you a power, Logia which are the most powerful and rare and let you become an element, and Zoan which let you become an animal.
